Shrimp Grits

Ingredients

  • 1 can coconut milk
  • 2 cups chicken broth
  • 3/4 cup grits
  • 2 tablespoons butter
  • salt
  • pepper
  • 1 small sweet red pepper
  • 1/4 cup olive oil
  • 2 garlic cloves chopped
  • 3/4 cup black beans either boiled or from a can
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili or cayenne pepper
  • 1 pound large shrimp deveined.
  • chopped chives

Instructions

  1. Bring the chicken broth to a simmer
  2. Add coconut milk to the broth
  3. Whisk in grits and cook until tender as they absorb the liquid. This takes about 15 to 25 minutes depending on the grits. Stir frequently
  4. Mix in butter
  5. Add salt, pepper and a pinch of paprika to taste
  6. While grits are cooking, heat oil in a pan or skillet.
  7. Cook garlic, paprika, and cayenne or chili pepper for half a minute.
  8. Add corn to the skillet and stir for about 3 minutes
  9. Add black beans and sweet red pepper and let cook for another minute
  10. Add shrimp and let cook for about 2.5 minutes per side
  11. Add salt and pepper to taste
  12. Serve shrimp mixture over grits topped with chopped chives.
