Stuffed Zucchini Boats

Ingredients

  • 2 small zucchinis, ends trimmed and sliced lengthwise in half
  • 8 cherry or grape tomatoes, cut in half
  • Extra virgin olive oil
  • 16 – 2cm cubes of Mozzarella cheese or Mozzarella cheese balls
  • Several basil leaves cut in strips
  • Salt, pepper
  • 4 Tbsp grated Parmesan cheese
  • Traditional Balsamic Vinegar

Instructions

  1. Preheat oven to 350F. Line a small baking sheet with parchment paper. Scoop pulp out of the zucchini halves, leaving a trough down the middle. Place on baking sheet. Lightly brush with extra virgin olive oil. Salt and pepper to taste. Fill the troughs with cherry or grape tomato halves. Bake for 25 minutes, until tender. Place mozzarella cheese cubes between tomatoes halves. Spread 1 Tbsp Parmesan cheese on top of each boat. Broil until cheeses are melted. Decorate with basil strips. Drizzle with Traditional Balsamic Vinegar. A take on Caprese Salad but in a zucchini boat. Serve hot.
  2. You can use this same recipe but change the stuffing to olives, chopped sautéed mushrooms, your favourite spaghetti sauce, sautéed sausage meat with tomato sauce. A fun addition to your summer plate.
